Peanut Butter Banana Protein Bread

 Well it's mid week again!  I hope everyone has been having a great one so far.  It's been a busy week over on my end (a teething toddler!) so I'm thankful I did some recipe creating this weekend and had this treat to keep me going all week.  

Having a snack ready to go is super key.  When life gets busy, you're hungry and there isn't anything made or ready to eat....you know what happens.  It's a free for all.  You walk in the door after work and you're immediately grazing the cupboards searching for anything.  Another example is mid afternoon at work.  You're hungry, there's nothing there but a vending machine full of chips, chocolate bars and more processed junk.  This recipe is the perfect solution!  Make the loaf, keep a few at work and some at home for when the snack attack arises.  

This Peanut Butter Banana Protein Bread is amazing.  I've been working to create the full recipe cookbook for the vanilla mix and this one is definitely making the cut!  What could be better than the smell of fresh banana bread filing the house?  I could tell you what's even better.....fresh banana bread that won't overload with you carbs, sugar or unhealthy oils.  This one clocks in at a cool 25 grams per huge slice and a bonus dose of 9 grams of protein.  Here's a fun comparison of just how great the nutritional information is on this recipe :)

Peanut Butter Banana Protein Bread

 

Ingredients

2 cups Buff Bakery Vanilla Protein Baking Mix

3 Bananas 

4 tbsp Peanut Butter

1 Egg

1/2 cup Greek Yogurt

1/2 cup Unsweetened Almond Milk

 

Directions

Preheat oven to 350 degrees.  Measure out 1/2 package of Buff Bakery Vanilla Protein Baking Mix (2 cups or 200 g) into mixing bowl.  Add to mixture, 2 mashed bananas, 1 egg, 4 tbsp melted peanut butter, 1/2 cup greek yogurt and 1/2 cup unsweetened almond milk.  Transfer entire mixture to a greased loaf pan.  Slice you third banana lengthwise and place on top of loaf.  Bake for 30-40 minutes until tooth pick comes out clean.  Slice into 8 equal slices.  

 

Nutritional Information (per slice)

6 grams of fat

25 grams of carbohydrate (3 g of fiber)

9 grams of protein

175 calories per slice
