It's Wednesday! If you're a local resident, I hope you've gotten outside to enjoy some of the warmer weather we've been having. It's such a breath of fresh air to get outside and feel the wind on your cheeks. This winter was a tough one! Lots of cold, cold temps and a few recent dumps of snow.
This weekend, we debuted our Vanilla Protein Baking Mix at The Market and I hope that some of you had the chance to give it a try. We're working hard to get the Vanilla e-cookbook under way! I wanted to create a few recipes for you all this week with the mix and was looking for some good inspiration.
This weekend was a tough one for myself and my family as we said goodbye to our family dog of 12 years. If you've ever had to say goodbye to a pet you know just how emotionally challenging this can be. The impact an animal can have on our lives is amazing. They offer us complete and unconditional love, a daily presence and many years of joy. It's a challenging time once your pet is gone to change your daily routines as so much of them is embedded into your life. One of my favourite memories of Griffin was as a puppy. My mother in law would babysit him every day for us and a snack they often shared was blueberry yogurt. He would come home with traces of yogurt in his whiskers and on his snout. On a side note here, I am definitely NOT a pet nutritionist nor do I advocate doing this.... but regardless that was the case back in 2004! It was an adorable scene to watch him try to get the last little traces of yogurt out of a small container.
So with wanting to do something to honour Griffin, the warm weather and high hopes of spring on the way, I decided Blueberry Muffins was the recipe to create. This one is simple, easy and a delicious breakfast with some grass fed butter or almond butter. I hope you guys make them, enjoy them and show us your work! I'd love to see it :)
Blueberry Buttermilk Protein Muffins
Ingredients
2 cups Synergee Vanilla Protein Baking Mix (1/2 package)
1/2 cup Greek Yogurt (plain or blueberry)
2 Eggs
1/2 cup Blueberries
Directions
Preheat oven to 350 degrees. Mix together Vanilla Protein Mix with eggs and greek yogurt. Fold in blueberries. Line a 12 cavity muffin tin with paper liners. PRO TIP - Spray your muffin liners with non stick spray! Bake for 15-20 minutes or until a tooth pick comes out clean.
